Revamp funding workflow to match p2p workflow

* Now more closely mirrors Joseph’s photos
* 3 step dance: init, theirFunds, theirSigs -> complete
* Currently missing any concept of reserve funds for CLTV
* Many lingering TODO’s still, once addressed will move onto Commitment
TX update, and HTLC workflow
